Cheesy Quinoa Too Sausage Broccoli Casserole

INGREDIENTS

QUINOA:
2 1/2 cups water
2 cups quinoa, rinsed in addition to drained

CASSEROLE:
1 1/2 Tbsp olive oil
1/2 loving cup chopped yellowish onion
1/2 loving cup chopped carrots
4 four oz links chicken sausage (I used chicken in addition to apple tree links) chopped
6 cups fresh broccoli florets, chopped
1/2 loving cup sudden cheddar cheese, shredded

CREAMY CHEDDAR SAUCE:
1/4 loving cup all-purpose flour
2 Tbsp unsalted butter
3 cloves garlic, minced
2 cups whole milk
2 cups depression sodium chicken stock
1 loving cup sudden cheddar cheese, shredded
1/2 tsp dried thyme
1/2 tsp kosher salt
1/2 tsp dark pepper
pinch ruby pepper flakes

CRUNCHY TOPPING:
1/2 loving cup panko breadcrumbs
2/3 loving cup sudden cheddar cheese, shredded
1/3 loving cup mozzarella cheese, shredded

INSTRUCTIONS

COOK THE QUINOA:
  1. Bring H2O in addition to quinoa to a boil inward saucepan.  Reduce heat, cover, in addition to simmer 12 minutes, or until liquid is absorbed.

  6. Add thyme, salt, pepper, in addition to ruby pepper flakes, stirring to combine.  Add inward one loving cup shredded cheddar cheese, whisking to melt cheese into sauce.

RECIPE NOTES

FREEZING INSTRUCTIONS:
  • Cool UNbaked casserole completely, hence encompass tightly alongside foil.
